No matter what the topic may be about, documentaries have a funny way of getting my totally motivated and worked up (especially these vegan documentaries!).  So when I know I need some motivation or inspiration for something specific, my Netflix queue is one of my first late-night stops. In this case – documentaries that inspire veganism and healthy living.

A vegan diet is hard.  It’s also empowering and satisfying…and if you do it right, really healthy. But it’s hard, especially in the beginning.  And it can be really difficult to find support and information, which is why these vegan documentaries are a must-watch for anyone embarking on a vegan diet. They’ll give you all the information you need, tips and secrets, and most importantly the motivation you need to keep going!

Vegan Chipotle Cheeseburger Wrap

Before I was on a vegan diet I splurged on a good cheeseburger every once in awhile, but even then the best burgers were the ones that were loaded with fresh veggies and lots of “stuff.”  So it was only a matter of time before I came up with the perfect version of an awesome loaded vegan cheeseburger and it is sooo delicious.  It’s one of my go-to vegan comfort foods and is fairly quick to put together, so it’s a perfect last minute meal (I also tend to have all the ingredients on hand which is an added bonus).

So the next time you’re home alone and want to stay healthy but splurge at the same time, give this a try!

Vegan Fruit & Nut Chickpea Salad

In the time that I’ve been on a vegan diet, I’ve learned a lot of things.  One lesson in particular will stay with me for quite some time – learn to love thy chickpeas.  

Beans are pretty crucial when you aren’t eating meat, dairy, or eggs, so learning to use different kinds of beans is a pretty big deal if you want to be successful as a vegan.  And chickpeas are a very special kind of bean because they somehow manage to be a wonderful substitute for both chicken and tuna (it sounds crazy, but I’m telling you, it’s true).
