My mom made us this broccoli cheddar soup last week and it was so good I couldn’t resist remaking it myself and posting it for you all. It is so, so easy to make, tastes delicious, is HEALTHY, and it’s actually pretty cheap too. So it’s basically a win-win.
Obviously it includes broccoli, but there’s also some carrots and onions in this for some extra flavor and nutrients. I’m sure you could add others, so use this as an opportunity to sneak in some other vegetables! I was able to get all of the veggies really cheap at the farmer’s market, so a big batch of this soup (4-6 servings) ended up costing me less than $10.
So here’s what you’ll need:
- 2 lb. of broccoli
- 1 big carrot
- ½ vidalia onion
- 1 32oz. container of chicken broth
- 1 cup of shredded cheddar cheese
- salt/pepper to taste
And here’s what you’ll need to do:
- Chop all of the veggies into bite sized pieces.
- Steam in about 1 inch of chicken broth for a couple of hours.
- When veggies are really tender, blend them together using an immersion blender or regular blender.
- Mix the remaining chicken broth to achieve the desired consistency (I used almost the whole container).
- Mix in the cheese.
- Add salt and pepper to taste.
- Reheat on the stove.
Time to eat!! I added a little cheddar cheese on top as a garnish, but it’s up to you to do that. Enjoy!
